How does the dispenser actually install. Glue? Tape? Magic? Is the hardware included?

The Camco Pop-A-Plate Disposable Plate Dispenser # CAM57001 referenced in your question will install to the underside of your cabinet or shelf using the included mounting screws. All of the necessary hardware to install the dispenser is included.
I have attached a short video demonstration so you can see exactly how this installs and operates.
