We no longer carry the Andersen Ultimate you reference, but according to what I can find online is rated for 24,000 lbs towing capacity. So you won't have any problem with the hitch itself.
You will need to determine the weight capacity of your Curt gooseneck. For instance the Curt hitches for a 2018 Chevy Silverado 2500 are # C607-604, # C611-624, and # C61301-52 all of which are rated for 30,000 lbs. As long as your gooseneck hitch capacity is over the 21,000 lbs, you will be fine with your combination. The lowest rated component will be the max tow capacity of your setup.
