Im interested in towing a jet ski, the sales guys told me I should make sure my tongue weight would support 500 lbs. seems like a lot for a single jet ski. do you have customers using volvos with this tow hitch with a history towing jetskis

A Jet Ski trailer would not put a tongue weight of 500 lbs on the trailer hitch. We have a Curt hitch part # C12318 which is a confirmed fit for your 2007 Volvo XC70 which has a tongue weight capacity of 350 lbs which would be more than enough for a Jet Ski trailer.
For trailer wiring you'd want # C59496, then for a ball mount you'd want part # C45016, hitch ball # A-82 for a 2 inch ball or part # A-80 for a 1-7/8 inch ball.
