For the 2 inch hitch receiver on your 2017 Subaru Crosstrek, I recommend looking at the MaxxTow Trailer Hitch Receiver Adapter # MT70033. This adapter will slide right into your existing 2 inch receiver and provide a 1-1/4 inch receiver on the other end for use with compatible accessories. It also features an overall length of 11 inches and a 7 inch measurement from the hitch pin hole on your current trailer hitch to the hitch pin hole on the adapter.
If you need a bit more extension, you can also look at the Tow Ready Hitch Adapter # 80301. This adapter measures 14 inches from pin hole to pin hole.
An important thing to keep in mind when using any kind of hitch adapter, is that it will reduce the tongue weight capacity of the trailer hitch by 50 percent. For example, if the 2 inch trailer hitch on your Crosstrek has a 350 pound tongue weight capacity, this will be reduced to 175 pounds when using the adapter. You will just need to make sure that the combined weight of your hitch-mounted accessory and contents falls below the reduced capacity.
I have attached a couple of short video demonstrations on both of these adapters that you can also check out.
