The T-WCR 2849 cargo carrier with a ramp that you referenced has a 2 inch shank on it since it is used for more of a heavy duty application. Both the Draw-Tite # 75908 and the Curt # C13195 trailer hitch options would be compatible with it as they are Class III hitches with 2 inch receiver openings.
Out of both of them I recommend you go with the Curt # C13195 option for your 2017 Kia Sorento because it has a 750-lb Tongue Weight (TW) rating. Since the cargo carrier is rated for 500 lbs and your Sorento could possibly be rated for 500 lbs it would be better to have a trailer hitch that is rated for more than enough TW. You will want to consult your owner's manual to verify what TW rating your Sorento has and you will want to make sure that you do not exceed that rating.
Please note that per the Curt warranty you will need to use a Support Strap, like part # 18050, for any non-trailer loads like this cargo carrier.
I also recommend using an anti-rattle device, like the Roadmaster Quiet Hitch # RM-061, to help reduce any play in the hitch receiver that you might experience.
