I purchased the equilizer hitch EQ37100ET and now I weighed out my setup at a truck stop and the tongue weight is 500lbs. I am wondering if I should switch to the equilizer EQ37060ET which I should have stuck with. Thanks for any info you can provide.

The Equal-i-zer Weight Distribution System # EQ37100ET operates effectively over a range of tongue weight (TW), from a low of 600-lbs up to 1000-lbs. The ideal situation is that your actual loaded trailer TW (along with the weight of any cargo in the Grand Cherokee that sits behind the rear axle) will fall near the middle of this range. If you were to carry a 100-lb cooler in the back of the GC, as an example, then that cargo weight would be added to your actual trailer TW, so 600-lbs would be your actual total effective TW.
The other system you referenced, part # EQ37060ET, works over a TW range of 200- to 600-lbs. Strictly speaking, on paper that one is potentially better-suited to your 500-lb TW but that alone does not mean you cannot use the higher-rated system. If you find no issues with trailer handling, as if the system were too stiff and made the trailer's handling jumpy, then you might simply alter your trailer loading scheme to slightly increase your TW.
