Can I replace springs on a 2000 lb trailer with 2500 lb trailer springs.

You certainly can go with a 2,500 lb rated axle leaf spring on a trailer that currently have 2,000 lb capacities. It would just give you a slightly stiffer suspension setup. You should note that doing this does not give you any additional weight capacity for your trailer. The weight capacity for a trailer is determined by several things like the axle capacity, brake capacity, coupler capacity etc.

The part # e66SR that you referenced would be a great 2,500 lb leaf spring. It measure 25-1/8 inches long as well.
