For your 2017 Jeep Cherokee Latitude Curt hitch # C13172 is a great option. Once installed you will only be able to see the receiver portion of the hitch. Installation of this hitch is not difficult and I am confident you can perform the installation at home. The bolt leaders do indeed come with the hitch. I have included links to the instructions and a video showing an example installation for you.
Installation required 8mm, 10mm, 13mm, and 21mm sockets, a 3/4 inch socket, tape measure, socket extensions, ratchet, safety glasses, a torque wrench, and a tool to trim fascia such as a rotary tool. For a torque wrench you can use # ALL944001.
If you plan on doing some towing I recommend etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag.
If the ball mount kit does not have the right rise or drop to tow the trailer level, use the link I have included that explains how to measure to choose a ball mount to tow the trailer level.
For wiring you can use # 118605 to add a 4-Way flat connector to the rear of the vehicle. It is possible to route the 4-Way end so that it is permanently mounted on the outside of the vehicle. Look for a grommet on the floor of the cargo area through which you can route the 4-Way. If there isn't one you would need to drill through the bottom of the floor (careful of what's on the other side), route the wires through, then seal up the hole with silicone such as # LT37464.
For a mounting bracket you can use # 18144.
