I watch another video on a different wiring harness and it said I couldnt use it with Rear air-conditioning. will this one work? 2015 Chevy Traverse, no tow package.

The trailer wiring kit you would want for your 2015 Chevy Traverse that has the rear AC is the Tekonsha part # 118270. This wiring harness can be used as an OEM replacement, but it also includes the fuses and relays to activate the tow package if your vehicle was not equipped with the tow package.
This will be a plug and play model that will install easily and would not interfere with the AC.
The Hopkins kit you referenced would work but is a universal hardwire application.
