Question:
Which swing away carrier model would you suggest for a Roadtrek Motorhome on a 2002 Dodge 3500 Van chassis with a single rear door opening from right to left as you face the back?

The Yakima EXO Swing Away Enclosed Cargo Carrier - 2" Hitches - 10 cu ft - 100 lbs # Y62VR, you referenced in your question would be a good choice for your Roadtrek Motor home that is on a 2002 Dodge 3500 Van chassis.
This carrier swings far enough to the right that your back hatch door will be able to be accessed and opened without any interference from the carrier.
I have included a video that shows the functions of this carrier box, and a link to installation directions. You will notice in the video that there are many options to add on with this carrier. For instance, a bike rack, a second enclosed carrier, a second open count, and more to meet your individual needs.
