I would like to know if a class 2 trailer hitch with a 300 lb tongue limit, 2500 lb tow capacity is available for my 2015 Mustang V-6 ? Would I have to have a custom made hitch?

For the 2015 Ford Mustang only light-duty 1-1/4-inch Class I hitches are made. This is because the car's frame structure cannot support the higher weight capacity of a Class II hitch. There would be no value is using a higher-rated hitch (nor in having one made) since the car itself cannot support even the Class I rating of 200-lbs tongue weight and 2000-lbs gross trailer weight.
According to the online Ford towing guide the V6 Mustang has a 1000-lb maximum trailer weight capacity. Your owner's manual will indicate the rated towing capacity for your specific Mustang.
The Class I hitch I recommend is the Draw-Tite # 24928 because it costs less than the Curt # C11405 and it does not require use of a stabilizing strap # 18050 for non-trailer loads as the Curt does.
For a 4-pole trailer wiring harness you can use # C56088 which is a plug-in install. The linked article will help you select a ball mount that allows the hitched trailer to remain level, which is important for good handling.
