I like those storage trays one can put into a hitch for a Dodge RAM 2015 for storing coolers etc. on it. What is this called and under which category can I find this?

You are describing trailer hitch mounted cargo carriers of which there are many, many options. I have included a link to the flat carriers for 2 inch trailer hitches for you (flat carriers do not have a ramp). If you have a 2-1/2 inch hitch you can use a reducer sleeve # C45405.
The most popular for 2 inch hitches is Curt cargo carrier # C18151. It is 24 inches by 59 inches and is rated for 500 pounds maximum. I have linked a video review for you. A carrier like this with high side rails is excellent for coolers and other gear.
Tie down straps like # IMF12637 are always good accessories to pick up with your cargo carrier. I also recommend a lock such as # RH5-XL, to deter theft of any hitch mounted accessory you use.
