I have a 2005 GMC Envoy, a 2004 Fun Finder T139 and will be hauling to average weight bicycles. Will this hitch set up be adequate, weight wise?

The first thing to consider for the Malone Dual Hitch Extender # MPG544 is that it will cut the capacities of the hitch it is used on in half. So you will need to determine how much capacity you would need for your bikes/rack and trailer and then compare that to half of the capacity that your vehicle's hitch has.
With that being said the product itself has it's own capacities as well. It has a 4,000 max trailer weight and a 400 lb tongue weight capacity.
A better option for you might be the # D210 which is similar but since the bottom of it is a ball mount platform you would not have to reduce the capacity of the hitch by 50 percent.
Capacities for this are:
Towing capacity: 7,500 lbs
Tongue weight capacity: 750 lbs
Receiver capacity: 350 lbs
