Typically two deep-cycle batteries is enough to power a 2,000 watt inverter like the Go Power Industrial Pure Sine Wave Inverter - GFCI # 34278156 you're looking at.
However, when it comes to being able to also power your A/C you're not going to be able to run it very long as air conditioners pull about 100 amp hours of power, which is going to drain your batteries.
Unfortunately, as of now RV solar right is not far enough developed to be able to replenish your batteries fast enough to maintain the draw the A/C will put on it.
Your best bet in this situation is to use a generator # CH44FR which would provide a 30 amp service for your trailer to be able to run your A/C as well as the rest of your appliances.
