My contact at Curt said that the 8600 GVW package will not affect how the Curt Trailer Hitch # C15325 fits on your 1991 Chevrolet K2500. I recommend using this hitch because of how well Curt manufactures their hitches. The max Gross Towing Weight for this hitch is 16,000 lbs and the max Tongue Weight is 2,400 lbs. Keep in mind that you will need to know your vehicle's towing weight capacity. If your vehicle's towing weight capacity is less than the Gross Towing Weight of the hitch, then you will need to tow based off of your vehicle's towing weight capacity.
If you are wanting a ball mount for equipment that requires a coupler, I recommend the B&W Tow and Stow Pintle Hook # BWTS10056. It does come with a 2-5/16 inch hitch ball, so if you are needing a 2 inch hitch ball you will want to get part # A-90 as well.
If you don't already have wiring set up on your Chevy, I recommend getting the Curt Wiring Harness # C55315.
