I need a hitch, wiring system, ball and cargo rack for the back of my enclave I just bought. Also thinking about something on the roof. What would you suggest.

I'd be happy to give you some recommendations for your new 2016 Buick Enclave.
For a trailer hitch receiver, I recommend the Draw-Tite Max-Frame Trailer Hitch Receiver Class III - 2", # 75528. This is a very strong and durable hitch with no drilling required for installation. The fascia door panel must be removed for hitch installation.
For your wiring, I recommend the T-One Vehicle Wiring Harness for Factory Tow Package - 7-Way Trailer Connector, # 118271. I've attached an installation on a similar vehicle for you. This will give you the trailer connector, the fuses, and relays to activate the tow package. If you will be towing a trailer with brakes, I recommend getting the Tekonsha Plug-In Wiring Adapter for Electric Brake Controllers - GM, # 3026-P, along with the Tekonsha Prodigy P3, # 90195, which is a proportional brake controller giving you the same braking force at the trailer brakes as you apply in your Enclave. It has an easy to read and understand LCD display that takes code deciphering out of the equation. It is customizable for your driving preferences and has 3 boost levels.
For a ball mount, I recommend the B&W Tow & Stow 2-Ball Mount - 2" Hitch - 5" Drop, 5-1/2" Rise - 10K - Black, # BWTS10037B. This hitch adjusts to allow you to tow your vehicle level and also stores cleanly out of the way to save your shins when loading or unloading cargo.
For a hitch mounted cargo carrier, I recommend the 24x60 Curt Cargo Carrier for 2" Hitches - Steel - Folding - 500 lbs, # C18151. It gives you strength, visibility, and will fold up when not in use.
For a roof rack, I recommend the Roof Rack By Rhino Rack for naked roofs # RR89SR. This rack has Vortex Aero Crossbars, integrated locking towers, and has a capacity of 165 lbs. For a roof rack for flush mounted rails that run front to back, I recommend the Rhino Rack consisting of Vortex Aero Crossbars - Aluminum - Black - 54" Long # RRVA137B-2, 2500 Series Legs # RRRLKVA, and Custom DK Fit Kit # DK224. These racks both have the T-Channel for mounting accessories in addition to the clamping style options.
