Recommended after-market tow package: trailer hitch and electrical harness. I mainly intend to use for a hitch bike rack, but on occasion, would like the flexibility to tow a trailer full of mulch, small boat, jet skis... Also, who would you recommend install it all...if it looks too overwhelming to me?

First, for a trailer hitch that fits your 2014 Mercedes GLK 250 BlueTec there is one option; Curt trailer hitch # C13155. And for a trailer wiring harness I recommend # C59236 since it is designed to work with 2 or 3 wire electrical systems and PWM (pulse width modulation) systems so pretty much all scenarios are covered.
A trusted mechanic or RV dealer with a service center could perform the installation for you.
When using the hitch for towing you can use ball mount # C45030. For a 2 inch ball use # 63845 and for a 2-5/16 inch ball use # 63847. The ball mount has a 1 inch rise and 2-1/4 inch drop. If the ball mount does not have the right rise or drop to tow the trailer level, use the link I have included that explains how to measure to choose a ball mount to tow the trailer level. Be sure to consult the vehicle owners manual for the vehicle capacities prior to towing.
Curt also says you have to use stabilization strap # 18050 when using this hitch for any non-trailer load (such as a bike rack or cargo carrier) per their warranty requirements.
