The 1958 Plymouth air conditioning system uses engine oil pressure to operate vent doors via a hydraulic valve. Is the hose material usable with the engine oil?

It depends on the hose. The part that you came from, # T0778500, is a fitting. Hose for high temperature engine applications such as # D15799 would work with engine oil just fine. This is 25 feet worth of hose. It is available in different lengths:
8 feet # D15740
5 feet # D15701
All of these lengths have a 1/2 inch inner diameter.
