First let's start with a hitch for your 1999 Jeep Cherokee. For that I would recommend the Curt Hitch part # 13084. Check out the install video I attached as well.
For trailer wiring you would want the part # 13084. I attached an install video for this product as well.
We typically recommend the use of weight distribution when the trailer weighs more than 50 percent of the tow vehicle.
The best way to pick out a weight distribution system is to base it off of the loaded tongue weight of the setup when it is loaded and ready to tow, this figure also includes the weight of any cargo behind the rear axle of the tow vehicle. I attached an FAQ on determining tongue weight for you to check out as well.
Typically tongue weight is 10-15 percent of the total trailer weight, since your trailer weighs 2,100 lbs your tongue weight will most likely be between 210 lbs and 315 lbs. Which for that weight range you would want the Reese Light Duty WD System part # 66557.
For a transmission cooler I would recommend the Deraile Cooler part # D13503, and to aid in the installation you would want the Derale radiator adapter fittings part # D13028
