I have a potential option for you, but there is not a custom fit gooseneck hitch for a 2018 GMC Canyon that I could find anywhere on the market. So with that being said, here is what I would use:
B&W Turnoverball Underbed Gooseneck Trailer Hitch for Flatbed Trucks - 30,000 lbs # BWGNRK1500
Yes, this is technically for flatbed trucks, but it is customizable. I say that as you are going to have to have a fabricator make some custom brackets for it to be attached to your frame, but it can be done. And it's B&W so it's American made and well built.
Did you have a different truck prior to your Canyon that you pulled the trailer with? Can't say we get people asking for this kind of thing very often.
