Can you replace fresh water tank with a larger cap. in a 2015 coachmen encounter?

As long as you have the extra space for a larger water tank you can definitely use it. For example, the 15 Gallon Valterra RV Water Tank # R8030 measures 30" long x 8" wide x 16" tall overall so you'll want to measure under your Coachmen to make sure this will fit.
