How can these be adjusted? the RV is new and the door doesnt stay in the open / up position

On each side of the Spring Support RV Cabinet Door Hinges item # 37270705 is an oblong hole where the screws attach it to the cabinet. You can move those around to adjust it but that's all you can do with them. These are designed for standard RV Cabinets which use very thin, cheap wood that's lightweight. If your cabinets are a nicer quality they may not be strong enough.
You can add the RV Cabinet Door Struts item # 37270545 for additional support. If it was me I would take it back where you bought it and complain. New stuff shouldn't do that.
