Will this fit all Demco ez latch channel mount couplers ?

The Demco 6-Hole Adjustable Channel Bracket # DM59601 will work with any channel mount coupler that mounts in a 3" channel.

I cannot say I am familiar with every last Demco eZ-Latch coupler from Demco, but I can tell you that every option we carry fits the 3" wide channel. This includes 2" couplers and 2-5/16" couplers. So the odds that it fits all of them is pretty good.
