Looking to purchase a pair of soft start Domatic Penguin 11 one the factory installed 2007 monaco knight the rear we replace about 4 years ago is there room in the low profile a/c unit .I have replace all cap. This year on the front unit

Yes, there is enough room under the covers for your Dometic Penguin II AC's to install the pair of SoftStartRV Soft Starts # SSR44FR. The main unit comes with a good length of wiring so it does not have to mount where your current electrical components mount and can mount where there is more room.
