Does this hitch sticking out effect the backup sensor functionality?

The Curt Trailer Hitch Receiver part # C15860 which is a fit for a 2013 GMC Sierra 2500/3500 will not affect the backup sensors. It does not stick out far enough to trigger said sensors so there will be no issues there. That said, whatever you attach to the hitch could but this would be on a case by case basis. I have attached a video for you on a model with backup sensors and there were no issues after install.
If you don't already have a 2-1/2" ball mount for this hitch, I recommend the Flash Solid Steel HD Adjustable 2-Ball Mount part # FA49-00-5625 which has both 2" and 2-5/16" hitch balls as well as a connection reaching down to 6" of drop. I have attached our full list below as well.
