would you happen to know of a 195 degree or 200 degree thread in type fan switch ?

The best thing I can recommend for you would be the Derale Adjustable Fan Control Thermostat # D16749. This product is adjustable from 150-240 degrees so it should work very well for you once set where you wanted it.
At this time we do not offer any thread-in fan control switches like the # D16731 that you referenced that are 195 or 200 degrees.
