Question:

When installing new wheel bearing seals, do you press them in so they let the grease out or keep it in? Is this the same for EZ Lube spindles? What about boat trailers?

If you're speaking of a # 10-9 grease seal like what would be used with the # e94YR 2.2 K axle you'd looked at, you'd want to use a double lip seal, like what's included with the axle.

The seal is installed so it's flush with the inner hub face. This would apply to any trailer the axle is used on. This particular axle features EZ Lube type spindles, which have the grease zerks on them so grease can be added. The grease caps feature rubber plugs, so you can access the zerk fitting without needing to remove the grease cap. Just remove the rubber plug, add grease using the fitting and replace the plug.
