I do have something similar to the Convert-A-Ball Cushioned Ball Mount/Clevis/Pintle # AMCC2 designed for a 2-1/2" hitch, but this is currently only offered in 2".
With that said, the Shocker XR Adjustable Clevis Mount # SHK85ZR is designed for 2-1/2" hitches and will also offer 4" of rise or drop if needed. It is also rated a bit higher at 12,000 pounds, but the pin holes will be 1-1/4" in diameter, as opposed to the 1" diameter ones on the # AMCC2.
As a side note, I did talk to Convert-A-Ball and you can use a reducer sleeve, like the # 337RTA252, with the # AMCC2. So if you wanted to stick with that, you absolutely can and it will be a much less expensive route. Though there wont be any adjustability, this is the way I would go.
