How do I add a brake controller to my 2021 Subaru Outback? I need to tow a trailer with brakes, I already have the hitch.

In order to add a brake controller to a 2021 Subaru Outback you'll first need to start with a 4-way trailer connector, the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector part # 118467 is what I recommend. It's plug and play. Then, you can adapt this to a 7-way which is required for electric trailer brakes, the 4 to 7-Way with 4-Way Adapter part # ETBC7L is what I recommend which is also plug and play. This would then allow you to install a wireless brake controller like the Curt Echo Mobile Brake Controller part # C51180, I recommend wireless as you don't have to splice into any wires or drill into your dash. I don't imagine you'd be towing everyday with the vehicle therefore wireless is the way to go.
