I have 600# sway bars and 600# tongue weight when the trailer is empty. Do I need to increase? Upgrade to 800#, 1000#?

The weight capacity of the 600 lbs Spring Bars is: tongue weight: 250 lbs - 600 lbs; gross towing weight: 6,000 lbs. If the tongue weight on your trailer is 600 lbs when empty, I would recommend increasing the weight capacity.
I would recommend upgrading to the Replacement Trunnion Spring Bar for Fastway e2 Weight Distribution Systems - 1,000 lbs TW # FA92-02-1099. This will give you a little leeway depending on what you will be hauling.
You will need the Replacement Trunnion for Fastway e2 Weight Distribution Systems - 10,000 lbs GTW
# FA92-02-1044 to replace the old trunnions. you will need 2 of each of those items.
