I understand that using this adaptor reduces the capacity of my hitch by 50, that will bring my hitch capacity to roughly 337 pounds so that will be the limiting factor since its less than the 400 pound rating on the adaptor. My confusion is on the tow vehicle. My 2021 Outback Onyx XT is rated for 350 pounds tongue weight, does this rating also get reduced by 50 when using an adaptor or would the vehicle rating remain at 350 pounds?

The EcoHitch # EH34FR doesn't provide an integral bracket for installing a 7-way trailer connector. We offer bracket mounts that usually work pretty well, which will use a pipe clamp to attach to the hitch crossbar, but because the crossbar will be buried behind the bumper cover once the installation is complete, that wouldn't be a good option in this case.
The Curt # C58000 Easy Mount bracket would be your best bet.
