The etrailer Class III hitch part # e98863 is a really great option for your 2011 GMC Acadia. It has the higher tongue weight capacity of 600 lbs and 6,000 lb trailer towing capacity when used with a weight distribution system and 500 lbs and 5,000 lb without wd.

It's not uncommon for the trailer hitches we offer to have higher towing capacities that the vehicles they fit. Reason being that our manufacturers first design the hitches to fit the vehicle and be as strong as possible and then rate them independently of the vehicle which is why you see the disparity like you found. In any towing setup you are limited to the lowest rated component as the overall capacity.
