Will this hitch reciever fit directly behind a roll pan or is this just a direct replacement for the oem hitch ?

The Curt # 14211 hitch will essentially be a direct replacement and may require trimming to install with a roll pan bumper. We do have the Curt # 13932, which is designed to fit a 1500 with a roll pan bumper, however. Unfortunately, it does not look like there are currently any options available for a 2500 or 3500 Sierra.
