I am replacing the current 4 stack leaf spring with the 6 stack UNA-256 Universal Group Double Eye Trailer Leaf Spring - 6 Leaf - 2,250-lb Capacity Replaces PR626 Item # e27SR on the Dexter 4400 lb. axel. What would be the replacement U bolt kit?

The CE Smith U-Bolt Kit # CE23003 will fit your 3" round Dexter 4400lb axle. The U-bolts are 7" long.
The 6-Leaf Double-Eye Spring # e27SR uses 6 leaves that are 3/8" thick which will make the spring pack 2-1/4" tall. When you add that to the 3" axle and 9/16" spring seat you have a total thickness of 5-13/16". That leaves you 1-3/16" for the spring plate and nuts.
