What difference in ST compared to LT? For example, LT235 85R16 versus ST 23585R16

If you're comparing the same load range tire, the ST235/80-16 will always have a thicker, stronger sidewall specifically designed for the vertical load it'll need to contend with for trailer use. The LT tire is designed for a light truck (hence the LT prefix) but they're acceptable for trailer use as well.
The Kenda Karrier # AM10501 you'd looked at is a load range F tire with a weight capacity of 3,960 lbs per tire/ 7920 lbs per axle. You'll want to make sure that the combined weight capacity of your tires meets or exceeds the GVWR of your trailer.
