I need the same setup for a 2021 Toyota 4Runner. Which REDARC module and harness would I need for that? And I’d want the mounting plate for the dash also

I would be happy to recommend the correct wiring harness and mounting panel for installing the Redarc Tow Pro Elite # RED44FR in your 2021 Toyota 4Runner.
Starting with the wiring harness you will need the Plug-and-Play Wiring Harness # RED49FR which will plug into the factory trailer brake controller port which is located above the emergency brake pedal of your 4Runner.
While there is not a mounting panel confirmed to fit your 2021 4Runner, quite a few customers have used the Mounting Panel for Redarc Tow-Pro Trailer Brake Controller Control Knob # 331-TPSI-002 in their 2020 4Runners so this may be a great option. The # 331-TPSI-002 measures 1-1/4" tall x 7/8" wide so I recommend double checking the dimensions of the switch blanks in your dash to confirm this will fit perfectly.
