I am looking at adding a fifth wheel set up for a 2019 Ram 1500, new style, crew cab, 6 1/2 foot bed for a half ton towable set up. Any recommended part numbers for the assembly?

The best option would be the Demco Hijacker Autoslide hitch part # DM8550034 with the rail kit part # DM8552032-71 for your 2019 Ram 1500 6.5 ft bed.
Since you have a bed shorter than 8 feet you'd need a slider hitch to give you the clearance you'd need to make sharp turns. What's great about the Hijacker is that it automatically slides as you make tight turns which allows you to not have to get out of the truck when you pull into/out of a parking lot.
