What is the weight rating of these rails?

Our fifth wheel rail kits like the Demco part # DM47VR that you referenced basically are rated to have the same weight capacity as any hitch that fits the rails. So as long as you aren't exceeding the weight capacity of the hitch installed in them you wouldn't have to worry.
