Will this hitch interfere with the working of they foot sensor?

The EcoHitch part # 306-X7372 (and all hitches that fit your vehicle) will affect the hands free liftgate sensor of your 2019 Honda Odyssey but the feature will not be lost. You'll just need to kick to either side of the hitch opening and it will function normally.
