I have a 2017 cadillac xt5. I want to get a trailer hitch for a bike rack. What is the best one to get? I want to be able to open the hatch when I dont have the bike rack on the hitch

For a bike rack then the Thule Apex Swing part # TH9027XT is the best option as it can swing out and away from the rear of the vehicle even with bikes loaded to give you the best rear cargo area access.
