I have a 2020 Subaru Outback Wagon I need a hitch for, I plan on towing a small pop up camper. what should I get?

For your 2020 Subaru Outback Wagon I highly recommend the Stealth hitch kit part # 391SUOB20T as it comes with everything you'd need to tow with your trailer from trailer wiring to the needed ball mount adapter. What's also really great is that when you aren't towing you can remove the ball mount/hitch opening and the hitch is totally out of plain sight.
