Question:

Im considering these for my 2018 VW Atlas. If I also buy the union T, can I configure the setup so that I fill both spring bags from one fill point instead of two? Is there any disadvantage to doing so?

Yes, if you want to use a union tee like the # F3025-1 you can easily inflate both bags of the Firestone kit part # F4175 equally with the same inflation valve. Unless for some reason you need ability to have one bag with more pressure than other this is the way to go for sure.
