What adapter is needed to hook this up to my Gladiator with factory tow option?

Curt doesn't yet offer a wiring harness for the 2020 Gladiator or Wrangler. What you could do is remove the black connector from the # C51170 Spectrum and the Tekonsha, part # 3073-P. You'd then wire the 3073-P to the Spectrum brake controller, color for color. Very easy.
Another option would be the Curt Echo, part # C51180. The unit is wireless and would plug inline at the 7-way connector between the vehicle and the connector for the trailer. The unit would communicate wirelessly with a smart phone (iOS v8.0+ or Android v4.4+). You'd simply download the app to your smart phone, and use the phone to control the brake controller. No drilling into the underside of the dash or wires to be run. Very simple installation.
I've linked you to the parts I mentioned, plus to a product description video for the Curt Echo.
