My 5th wheel trailer has Summit aluminum 16” 8 on 6.5” 3750 lbs. 110 psi rims on it. I am looking to replace my current 235/85 R16 load range F tires with Sailun S637 235/85 R16 load range G tires. Will these rims safely handle the new tires?

The new tires you mentioned will fit and work well on your Summit wheels from a fit and PSI perspective but the tire will have more weight capacity than your wheel. Most likely you will need a higher rated valve stem as well as you most likely have a lower rated one and would need a higher rated one. For that you'd want the # AM20906 as well and you'd be set.
