I have a follow-up question for this toad vehicle. Using the recommended parts from the previous reply, about what height from the ground will the tow bar be at? I need to know what roadmaster dual hitch receiver to purchase. how much will be needed? My tow vehicle is a 2017 Jayco Class C 29foot Greyhawk. The top of an installed ball hitch is 20inch from the ground Thanks,

With the Roadmaster Crossbar-Style Base Plate Kit # RM-523182-4 installed on your 2018 GMC Canyon the tow bar will be mounted 17-1/2 inches off the ground. Keep in mind this measurement is assuming your Canyon is equipped with the stock 265/60R18 size tires.
Based on the 20 inch height you mentioned for the hitch on your RV you will technically still be in the "Safe Zone" (within 3 inches above or below level) without an adapter but to get even closer to level you will just need the Roadmaster High-Low Adapter # RM-072-2 that features a 2 inch drop or rise.
