I would like to be able to tow a jetski. Is this sufficient for that?

Yes, the Curt hitch part # C11435 is a confirmed fit for your 2016 Mazda MX-5 Miata and would have enough capacity for pulling a jetski trailer. It has a 2,000 lb capacity which would be more than enough.
For trailer wiring you'd then need the part # C56300 which is a confirmed fit. This installs by plugging inline with the taillight connectors for an easy install.
For a ball mount you'd then want the part # C45521 and ball part # A-80 and pin/clip part # F-4.
