Question:
Hitch and 2 fatbike carrier for 2018 Hyundai Elantra From my research it appears that that my car can only accomodate a 1.25 inch hitch, however I cannot find a reasonable priced bike carrier that will fit the 1.25 inch hitch. In addition, I have been advised not to use a 1.25inch to 2foot extender. What carrier would your recommend for my situation?

Your 2018 Hyundai Elantra does only have one Class I hitch available as long as your Sedan is not the sport model. In that case, we have the Curt # C11424 which is the class I with a 1-1/4 inch receiver. This Curt hitch # C11424 will require the stabilization strap # 18050 when using a bike rack or accessory.
Then for your bike rack I recommend the RockyMounts MonoRail Solo Bike Rack for 2 Bikes - 1-1/4" and 2" Hitches - Wheel Mount # RKY10007-05. This is a foldable bike rack that will not require the hitch expander you mentioned which I agree is not wise for this application. This rack comes with the locks to secure it to your hitch and deter theft of your fat bikes.
Another option that provides some different elements like folding and wheel hooks is the Kuat Transfer V2 Bike Platform Rack # KU74FR. This is also a great choice with the ability to fold for storage close to your hatch and tilt away for cargo access.
It comes down to preferences as both of these bike racks will serve you very well, so I've attached a couple videos to assist. The tongue weight of your loaded bikes and the rack will need to be within the capacity of your vehicle.
