Could I mount these on the side of my enclosed cargo trailer camper conversion trailer and transport my kayak on trips.

There are options to carry your kayaks inside your enclosed trailer but Rhino Rack does not recommend part # RRRWHL for that purpose. The Rhino rack storage rack for kayaks is designed to be drilled into a wooden stud of a wall.
I recommend Swagman Tajo Wall Mounted Kayak Storage System part # S65146. I contacted Swagman and as long as the storage system is mounted into some type of support beam in the trailer it will be strong enough to store the kayaks. We also had another customer successfully install the Swagman storage system on the inside of his enclosed trailer. I have attached a video review of the Swagman Storage System.

I followed the recommendation, bought the swagman version, and would strongly advise against using them for anything other than fixed storage. I mounted them to an A-frame I built for an open trailer. Trailers just bounce too much for these to be safe (enclosed or open). The screws holding the top straps in place came loose, the pins that allow rotation came out, and the foam padding was damaged. That's all after 1.5hrs of fairly smooth freeway driving! Now I'm stuck with them since they're used.
