I cannot find this vehicle in the choices for Roadmaster or any others, any information would be appreciated.

I took a look at the online owner's manual for your 2014 Ford Escape and it states that it cannot actually be towed behind an RV with all 4 wheels on the ground. Towing the vehicle in this manner can damage the vehicle or transmission. This is likely why there aren't any base plates or wiring kits available for the vehicle.
If you have a front-wheel drive model you can pull it behind your RV using a tow dolly like the Roadmaster # RM-2050-1 to lift the front wheels off the ground. With this tow dolly you will also need to add a 7-Way connector like # PK12706.
If you happen to have the four-wheel drive model the only way to transport it is with all 4 wheels off the ground using a car hauler/trailer.
