Im researching a contingency for upgrading the 2010-2016 Ford F-250 through -550 specific example: 2016 F-250 from the stock 7+4-pin Pollak dual socket, 6-blade+1-pin utility paralleled by 4-pin flat to a 9-pin set-up backwards-compatible with SAE J560 at the circuit level - I anticipate needing to retrofit a center brake lamp feed for certain trailers. The PK 12-906 plug that mates with the PK 12-907 socket can be the tractor side of a number of adapter dongles, incl. one using the Pollak PK 11-702 for an SAE J560-compliant trailer. The center brake hookup will occupy the 14 OR pin option in lieu of a refrigeration temperature send an AUX power feed switched in the cab, the 12 GY pin. Is the center brake wire available in the stock harness for this retrofit or will a new harness need to be built that carries the center brake feed?

When upgrading your factory 7-way to a 9-way # PK12906 and # PK12907 as you referenced, there would need to be a separate harness made. To separate out the brake light for that separate pin, you would need to use the Curt Vehicle to Vehicle Tail Light Converter # C56196. This will give your the separate signal for the center brake light you mentioned.
The other couple pins can be configured as you stated for refrigeration or aux power as you stated. For another 12V power, you will simply use # 10-1-1 and a circuit breaker like # 9510.
